For the longest time I have always celebrated Cinco de Mayo. It started many years ago when I was a Part time teacher in Hanalei. I was so impressed with all of the cultures that were in Hawai'i I wanted to share mine with the students. So along with the Art Teacher and myself we planned a huge Cinco de Mayo Celebration..it was one of my fondest and proudest moments of my career as a teacher. Today...I usually don't go all out unless I happen to be subbing that day..I may bring in my Mexican music and my costumes and show the students all my Mexican Memorabilia. At Home I usually cook a traditional Mexican Meal. My families hands down favorite is my Mother's infamous Machaca . Another favorite is my Chicken Enchiladas and I like to make a Mango Salsato go along with it. Tonight for dinner I have had the pleasure of my daughters' soccer team getting together and cooking for us. One of the parents put together a Spanish Rice Casserole, it looks delish and I can't wait to heat it up and serve a salad with it and maybe some cornbread. Yumo!
Another staple at a Cinco de Mayo supper is the Margarita. That is my favorite drink {i'll have to make mine virgin}. In Hawai'i I used to make a Watermelon Margarita, it was so refreshing and the funny part is I don't even like Watermelon but I love it in a Margarita. Don't forget the dessert. Hmmmm, something chocolate, maybe a Tres Leches cake...
Years ago.....when I had to be about 22 years old I was teaching preschool and I wanted to make Dulce de Leche {Sweet Milk}. Whenever we where in Mexico with my family I would buy Cajeta {goats milk} which is very similar to Dulce de Leche. Today Dulce de Leche is my FAVORITE Ice Cream. If you would like to learn how to make it...here is a video on making Dulce de Leche and that is how I made it those many, many years ago when I was a virgin cook. Whatever you do whether you cook a nice Mexican meal for your family or go out to El Torito...raise your glasses and toast Feliz Cinco de Mayo!!

I love Mexican food! It's my fave. Last night I made tacos, Mexican rice and my salsa. The family devoured everything, including myself. I do need to make that mango salsa again!
