Flank steak,( I got mine at Costco) two of them. salt, pepper, oregano, garlic cloves,chopped onion, 2 green peppers, 2 Serrano peppers or 1 Anaheim pepper, 1 can of stewed tomatoes, 4 TBSP of ketchup
You cut slice the garlic into little slivers. Then you cut slice on the front and back sides of the meat and put the garlic in them. Sprinkle both sides of meat with salt,pepper and oregano.
You brown it on both sides for like a half of an hour on each side. Put it in a 350 degree oven..should of told you that earlier..think my coffee is just kickin' in.
Now let the meat cool and then shred the meat...when I was a little girl this part was my favorite..I loved sneaking pieces of just the meat..it tastes like beef jerky. In fact the Mexican People made it for that reason..they would hop on their Horse or Burro and brink along the cooked flank steak on trips. (according to my Mother, who is the AUTHORITY on Mexican People), that's another story..My girls love to sneak the meat..like I used to..funny how times never really change.
Put about a tablespoon of oil in skillet ( I used to use an electric skillet but my meat started sticking to it so now I use this wok..until I get a new electric skillet. Put in the sliced onion and meat in it and saute it over medium heat.Once onion is opaque in color add in the peppers, tomatoes, salt,pepper and garlic salt, oregano and Ketchup. If you like it a bit more on the spice side add the seeds of the peppers to it. I don't have a Mexican tongue so I have to have some Coke or lots of water to wash it down with. Cover for 1 hour and stir occasionally.
Put meat in a warm tortilla and wrap that puppy up! Yum!! Actually the next day it will taste better when all the spices have a change to "gel" and mellow each other.
