This is from my Longaberger cookbook. Another sweet treat.
LEMON DROPS Makes...24-30 cookies
1/2 cup of unsalted butter, softened
1/2 cup of confectioners sugar
1/2 teaspoon vanilla extract
1 1/2 teaspoons of chopped lemon zest
1 1/4 cup of flour
1/2 teaspoon of salt
Lemon glaze..see below
Cream the butter and the confectioners' sugar in a mixing bowl until light and fluffy. Add the banilla and the lemon zest. Mix in the flour and salt until smooth. Chill for 1 to 2 hours.
Roll the dough gently 1/2 inch thick on a lightly floured surface. Cute into small circles with round cookie cutter. Place on cookie sheet lined with parchment paper or foil. Press a small indentation in the center of each circle. Bake at 375 degrees for 15-20 minutes or untile light golden brown around the edges. Cool on wiere rack. Place small dollop of Lemon Glaze on each cookies.
Lemon Glaze
1/4 cup (1/2 stick) of unsalted butter,melted
1/4 cup strained lemon juice
1 package (pound) of confectioners sugar
1 drop of yellow food coloring
Combine the butter, lemon juice, sugar and food coloring until smooth.
