When it warms up I like to lighten up my cookin' and I don't necessarily mean... low in Calories, but this recipe could be just that if you subsitute the regular sour cream for fat-free sour cream. It does have one special ingredient...
RED PEPPER JELLY...you can find red pepper jelly in your local grocery store but I'm a sucker for pretty jars and labeling. You can find this particular pepper jelly at World Market!! Yep...when your done with the jar you can use it for a nice glass of Sparkling Lemonade or it makes a beautiful flower vase...

Doesn't that salad look so good? Yep this recipe is a keeper....it is a bit on the spicy side if you don't like it so spicy omit the picante sauce. Mr. Incredible LOVES everything spicy, {that's why he fell in LOVE with me}
~~~~~~~~~~~~~~~~~~~~Spicy Warm Chicken Salad~~~~~~~~~~~~~~~~~~~~~~~
Ingredients:
1 envelope of onion soup mix
4 boneless skinless chicken breast halves, 4 oz each. I used chicken tenders, more skinnier
2 tablespoons of olive oil
1 can {15 oz.} pinto beans, rinsed and drained
1 cup of frozen peas
1/2 cup of picante sauce
1 can {4 oz.} of chopped green chilies
1/4 cup chopped green onions
1/2 cup of sour cream
1/2 cup pepper jelly
1 tablespoon lemon juice
spring mix or 2 cups of romaine lettuce chopped
2 cups of iceberg lettuce
1 small sweet red bell pepper, thinly sliced
1/4 cup of mined fresh cilantro
Directions:
1.} Rub soup mix over both side of chicken. In small skillet cook chicken in oil over medium heat for about 8 minutes on each side. Remove from heat and keep warm.
2.} In the same skillet, combine the beans, corn and picante sauce {if you don't want it too spicy omit this}. Cook and stir over medium heat for 2-3 minutes or until heated through. Stir in chilies and onions. Set aside. In small bowl combine sour cream, pepper jelly and lemon juice, set aside.
3.} Toss both types of lettuce together; divide among four salad plates. Slice chicken; arrange on greens. Place red pepper slices and bean mixture around chicken. Drizzle with sour cream mixture and sprinkle with cilantro. Make yourself a margarita and Muy Bueno!
