It has been so very hot here in Southern California...I have a hard time sleeping with sweat dripping between my boobs..I know not a pretty thought...so the last thing I want to do is turn on the oven or cook over a hot stove...
enter the Pulled Pork Sandwiches in the crock pot! Your a saviour....this is so tasty and great to take to a picnic, pot luck or when you sweat between your boobs hot!!
1 3-4lb. boneless pork shoulder roast
3 medium onions, cut into wedges
1/2 tsp. salt
1/2 tsp. ground black pepper
6 cloves of garlic, minced
2 12-14oz. bags of frozen peaches
1 cup of ginger ale
1 28oz. can of diced tomatoes with basil, garlic and oregano, drained
20 hamburger buns { I used hoagies this time}
lettuce and sliced peaches, optional
Directions:
1.} Trim fat from meat, cut meat to fit in crock pot in a 5-6 quart cooker. {i do not have one this big, so it spills over the side, I make a mess but it is worth it}. Place onions in. Put meat on top of the onions. Sprinkle with salt and pepper. Add garlic, peaches and ginger ale.
2.} Cover and cook on low 8-10 hours or high 4-5 hours.
3.} Remove meat to cutting board, reserving remaining mixture in cooker. Using 2 forks, pull meat apart into bite size pieces. Return meat to cooker Add the drained tomatoes and stir to combine. Line buns or hoagies with lettuce. Use a slotted spoon to spoon meat mixture on buns. Top with additional peaches. Makes 1/2 cup servings. Enjoy with other pot luck favorites..
Found this recipe in my Better, Homes and Garden magazine it is a favorite around here...so give it a try with some store bought Red Potatoe salad.
